Watermelon and feta salad

Watermelon and feta salad

Ingredients

  • 1/4 a large Watermelon (cut into wedges)

  • 2 Apricots (quartered)

  • 1/2 Cucumber (sliced)

  • 2 Kiwifruit (peeled and sliced)

  • 4 Stawberries (quartered)

  • 1 tbs fresh mint leaves

  • Feta Cheese (crumbled)

  • 1 Tbs Maple Syrup

  • 1/4 Lime (juiced)

  • 1 tbs Extra Virgin Olive Oil

  • Sea Salt


Method

  1. In a small mason jar, combine maple syrup, lime juice, olive oil and salt. Cover with lid, shake to combine and set aside.

  2. In a serving bowl, combine chopped fruit, cucumber, mint and feta.

  3. Divide into bowls and drizzle with desired amount of dressing. Enjoy!
