Savory Nori and Seed Bars
Something to boost the minerals and hit the crunch cravings in the same mouthful. Give the kids this without worrying about a sugar crash or empty calories. Or cut it up smaller for something special on the cheese platter.
The combination of oats, seeds, nori and healthy fats are a great source of nutrients for both us and the gut microbiome.
Ingredients
1/2 Cup Oats (Rolled)
1/4 Cup Rice Puffs Cereal
1/2 Cup Pumpkin Seeds
1/2 Cup Hemp Seeds
1/4 Cup Sesame Seeds
2 Nori Sheets
2 Tbs Nutritional Yeast
1/2 Tsp Sea Salt
1/2 Cup Honey
1/2 Cup Tahini
Line a baking dish with parchment paper, ensuring it covers all sides. In a large bowl, combine the oats, cereal, pumpkin seeds, hemp seeds, sesame seeds, nori, nutritional yeast, and salt.
In a small bowl, mix the honey and tahini together. Add it to the bowl with the dry ingredients. Mix very well with a spatula until everything is thoroughly combined.
Transfer the mixture to the prepared baking dish, pressing it firmly into an even layer. Refrigerate for one hour or until it sets.
Cut it evenly into rectangular pieces and enjoy!
Refrigerate in an airtight container for up to one week. Freeze for up to three months.
