Winter beet salad

Ingredients
2 Beetroot (peeled)
1 Pear
1 Cup mixed greens
2 tbs Avocado Oil
2 tbs Apple Cider Vinegar
1/4 Cup Pomegranate
1/4 Cups Walnuts
1/4 Cup Feta Cheese (optional)
Bring a pot of water to the boil and add beetroot. Cook for 25 minutes or until soft. Set aside to cool.
While the beetroot cook, make the dressing. Combine the oil and apple cider vinegar in a jar and shake vigorously until combined.
Slice the beetroot thinly.
Divide the mixed greens evenly between plates. Top with the cooled beets, pear, walnuts, pomegranate seeds and cheese. Add the dressing and enjoy!
Dairy-FreeUse nutritional yeast instead of feta cheese, or simply omit the cheese.
